Cajun Vs. Creole

Both the Cajun and Creole people has developed many popular Louisiana cuisines and share a foundation of rice, meats/seafood, and the “Cajun Holy Trinity” (onions, celery, bell pepper), and the Holy Ghost (garlic).

Cajun cuisine originated from Acadian settlers (French-Canadian) and is a more rustic style developed in rural Louisiana, emphasizing one-pot meals, smoked meats, and bold spices.

Creole cuisine originated from a melting pot of French, Spanish, African, Caribbean, and Italian cultures in New Orleans, Louisiana, featuring more complex sauces with tomatoes, aromatics and herbal ingredients.
