Dirty Rice is a popular Cajun side dish, made with ground beef and livers.

Ingredients
8ozground beef
1/2cupchicken liverschopped, about 2.5 oz
1Tbspbacon greasemay use vegetable oil
14ozchicken broth
1onionchopped
1/2bell pepperchopped
1ribcelerychopped or minced
2clovesgarlicminced
1bay leaf
2tspCajun Blaze Seasoning, All-Purpose
1.5cupsricelong grain
Instructions
Set aside 1/2 cup of chicken broth for meat mixture.
Use remaining chicken broth (1.25 cups) and 1.75 cups of water to cook rice on stove*.
In a separate pot, preferable cast iron, heat bacon grease and brown ground meat over medium heat. Be sure to break up into small pieces.
Add Trinity (onion, celery, and bell pepper) and cook until ground meat is no longer pink and onions are translucent.
Add chicken livers, garlic, and Cajun Blaze Seasoning. Continue to cook for 5 min.
Add remaining chicken broth (1/2 cup) and gently scrap bottom of pan with wooden spoon to darken and include all seasoning in "gravy." Simmer for another minute, or until the rice is ready.
Mix cooked rice in the meat mixture and serve.
Notes
*Cooking rice on the stove generally requires a 2:1 ratio of water to rice. Once you bring your water to a boil, add rice and allow the water to just return to a boil. Then quickly reduce the heat, cover the pot, and keep the water and rice at a simmer (just below the boiling point for 17-20 minutes). You want the top of the liquid to be bubbling, but gently, not at a full boil, which could also cause the water to bubble up out of the pot.*You may alternately cook rice in a rice cooker by following the manufacture's suggested method.
